Recipe: Easy Dinner

I want your easy dinner recipes! Here's one of mine. You can make everything with the low-fat versions, too. This recipe is a la April, and it only takes about 20 minutes to make. Served with a green veggie, this makes a perfect, no-brain, tasty meal. The other reason I like this recipe is because you can pretty much have the ingredients on hand at any time, so you don't have to plan ahead (no thawing, etc.). Which is great when I haven't started thinking about dinner until it's practically time to eat. Nathan loves this, and it works from a family dinner to an appetizer at a swanky party.


Creamy Chicken Stuffed Crescent Rolls
1/3 to 1/2 brick cream cheese, softened
1 can white meat chicken (on the tuna aisle)
1 Tablespoon sliced almonds, toasted
salt and pepper to taste
1 can Pillsbury crescent rolls

Combine first four ingredients. Unroll crescent rolls and put equal amounts of the chicken mixture at the wide end of each triangle. Roll up and bake according to package instructions.

*Variations:
- add some dried cranberries
- make a mushroom sauce (a can of cream of mushroom soup thinned with milk, for example)
- instead of chicken, use ham and a little mustard

Try this for a fast, healthy & flavorful main dish/veggie combo:

CHICKEN ROUNDERS

Take boneless,skinless chicken breast and pound to thin it out a little. Season up the chicken with whatever you like or you can marinate it for a little while as well. Then take a few trimmed spears of asparagus and roll them up in the chicken breast. Hold them together with a couple of toothpicks. Drizzle whole thing with a little olive oil. Bake in 375 oven for 25 - 30 minute.

I've been on a kick of cubed steak with sauteed onions.

If you don't know, "cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding of a meat mallet or use of an electric tenderizer." Thanks, Wikipedia. We used to have it a lot growing up b/c it's a cheap cut of beef that ends up being pretty tender.

Anyway..
STEAK:
Season with salt, pepper, and Worcestershire sauce. Pan fry (I just use cooking spray).

ONIONS:
Cut up a nice vidalia onion and sautee in a little olive oil. So sweet, and so good!

You can make a similar simple recipe with ground beef (or turkey) a packet of taco seasoning and 1 cup of shreadded cheese. Brown the ground meat, stir in taco seasoning and cheese, place in crecent rolls and bake. Serve with sour cream and salsa, kids love it too!!!
