Fall Breakfast

A few weeks ago, I organized a fall brunch with a bunch of mommy friends. Like the fall brunch from last year, we all brought some fall food and just hung out for a couple of hours. It was lots of fun!

A few of our recipes:
  • Pumpkin Pancakes
  • Baked Apples (made a great topping for the pancakes!)
  • Sausage and Egg Casserole
  • Apple Tart
  • Stuffed Pumpkin: Cut the top off of a sugar pumpkin and scoop out the seeds. Run a fork along the inside of the pumpkin, scoring it. Drizzle some vanilla extract and cinnamon inside. Replace the top and bake for about 30 minutes at 400 degrees. Meanwhile, mix up some spice cake mix. After the first bake, fill the pumpkin about 2/3 full of cake batter. Bake another 30 minutes or so until a toothpick inserted in the center of the cake comes out clean. Slice as you would any other baked dessert, in wedges. (You can see it in the picture above.)
